INGREDIENTS
Potatoes
- 🥔 4 large baking potatoes
Meat
- 🥓 8 slices bacon
Dairy
- 1 cup sour cream
- 🥛 ½ cup milk
- 🧈 4 tablespoons butter
- 🧀 1 cup shredded Cheddar cheese, divided
Seasoning
- 🧂 ½ teaspoon salt
- ½ teaspoon pepper
Vegetables
- 🧅 8 green onions, sliced, divided
STEPS
Preheat the oven to 350°F (175°C). Bake potatoes in the oven until tender, about 1 hour.
Cook bacon in a skillet over medium-high heat until evenly browned. Crumble and set aside.
Cut potatoes in half lengthwise and scoop out the flesh into a large bowl, saving the skins.
Mix potato flesh with sour cream, milk, butter, salt, pepper, 1/2 cup Cheddar cheese, and half of the green onions until creamy.
Fill potato skins with the mixture. Top with remaining cheese, green onions, and bacon.
Bake filled potatoes in the oven until cheese is melted, about 15 minutes. Serve hot.
