INGREDIENTS
Strawberry Sauce
- ๐ 2 cups fresh strawberries
- ๐ง 6 tablespoons sugar
- ๐ 1 teaspoon fresh lemon juice
- ๐ง 1 pinch salt
- 1 tablespoon water
- 1 teaspoon cornstarch
Crust
- ๐ช 2 1/4 cups Oreoยฎ cookies
- ๐ง 2 tablespoons brown sugar
- ๐ง 1/8 teaspoon salt
- ๐ง 1/2 cup unsalted butter
Cheesecake Filling
- ๐ 16 small strawberries
- 3 (8 ounce) packages cream cheese
- ๐ง 3/4 cup white sugar
- ๐ฅ 1 cup heavy cream
- ๐ 1 tablespoon fresh lemon juice
- 2 teaspoons vanilla extract
- ๐ง 1/4 teaspoon salt
- 1/8 teaspoon almond extract
- 1 pinch ground nutmeg
- ๐ฅ 3 large eggs
STEPS
Make the strawberry sauce by combining strawberries, sugar, lemon juice, and salt in a saucepan. Cook until softened, mash, and then thicken with cornstarch-water mixture. Strain and refrigerate.
Preheat the oven to 350ยฐF and prepare a springform pan.
Make the crust by combining Oreo crumbs, brown sugar, salt, and melted butter. Press into the pan and bake for 15 minutes. Cool for 10 minutes.
Prepare the cheesecake filling by blending cream cheese with sugar, then add heavy cream, lemon juice, vanilla, almond extract, nutmeg, salt, and eggs. Combine all until smooth.
Layer the cheesecake filling and drizzle strawberry sauce in between. Bake cheesecake for 45 to 50 minutes, cool in the oven for 1 hour, then refrigerate for at least 8 hours.
When ready to serve, toss strawberries in reserved sauce and decorate the top of the cheesecake. Garnish with Oreos if desired.
