For Cake
- 1/2 cup light brown sugar
- 1/4 cup white sugar
- 3/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 1/2 cups almond flour
- 🥚 3 large eggs
- 🍋 1 tablespoon lemon juice
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 6 tablespoons all-purpose flour
- 3/4 teaspoons baking powder
STEPS
Preheat the oven to 350°F (175°C). Generously butter a 9-inch round cake pan and line the bottom with parchment paper.
Cook 1/2 cup of butter in a saucepan until browned (5 to 7 minutes), then transfer to a mixing bowl to cool for 10 minutes.
For topping, melt 5 tablespoons of butter and combine in the pan with brown sugar, cinnamon, and nutmeg. Spread evenly. Arrange sliced plums tightly on top.
In the mixing bowl, combine browned butter, brown sugar, white sugar, salt, cinnamon, and nutmeg. Mix well.
Add almond flour to the butter mixture, then beat in eggs one at a time. Continue mixing for 3 minutes until fluffy. Incorporate lemon juice, vanilla, almond extract, flour, and baking powder gently.
Pour batter over the arranged plums in the pan and spread it evenly.
Bake for 45 to 55 minutes until the center bounces back when lightly touched. Cool cake in the pan for 10 minutes.
Invert the cake onto a platter, peel off parchment, and allow to cool completely before serving.
