INGREDIENTS
Base Ingredients
- 1 cup white sugar
- 🍋 1 tablespoon lemon juice
- 🥭 2 cups pureed mango
- 1 (14 ounce) can sweetened condensed milk
- 2 tablespoons cornstarch
- 1 tablespoon rum (Optional)
- 🥛 1 cup evaporated milk
- 🥚 6 eggs, beaten
- 🧂 1 pinch salt
STEPS
Preheat oven to 350°F (175°C). Fill a large, shallow baking pan with about 1 1/2 inches of water.
In an 8x13 inch aluminum baking pan over medium heat, mix the sugar and lemon juice. Cook and stir until caramelized.
Remove from heat, and blend in the mango, sweetened condensed milk, cornstarch, rum (optional), evaporated milk, eggs, and salt.
Set the pan with the mango mixture into the pan with water. Place in the preheated oven and bake for 45 minutes, or until firm.
Cool before turning out onto a platter.
