INGREDIENTS
Cake
- 1 3/4 cups flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon sea salt
- 🧂 1 1/4 cups white sugar
- 🍋 1 teaspoon lemon zest
- 🧈 16 tablespoons unsalted butter
- 2/3 cup sour cream
- 🍋 10 tablespoons lemon juice
- 🧀 6 ounces cream cheese
Frosting & Glaze
- 🧂 3 3/4 cups powdered sugar
- 1/3 cup whipping cream
- 🥛 2 tablespoons whole milk
- 1 1/2 teaspoons vanilla extract
STEPS
Preheat oven to 350°F (175°C) and prepare a 9-inch square pan with cooking spray and parchment paper.
Mix flour, baking powder, and salt. Separate bowl: rub sugar and lemon zest together.
Beat butter with lemon-sugar mixture, adding eggs one at a time. Alternate mixing dry ingredients, sour cream, and lemon juice.
Spread batter into prepared pan and bake for 25-30 minutes until lightly springy. Cool completely.
For frosting: beat cream cheese and butter, gradually add powdered sugar. Mix in whipping cream, lemon juice, and salt.
Frost cooled cake, freeze for 1-2 hours. Cut into 12 rectangles.
Prepare glaze with milk, vanilla, powdered sugar, and lemon juice. Glaze each cake piece and chill.
