INGREDIENTS

- 🍍 1 (20-ounce) can crushed pineapple in syrup
- 1 cup packed light brown sugar
- 💧 1/4 cup water

- 1/4 teaspoon vanilla extract

- 1 (15.25 ounce) box yellow cake mix

- 1/2 cup vegetable oil
STEPS
Preheat oven to 350°F (175°C). Spray a 13- x 9-inch baking pan with baking spray and line bottom with parchment paper.
Drain pineapple over a sieve and reserve 3/4 cup pineapple juice, adding water to make up the amount if needed.
Cook brown sugar and butter in a saucepan over medium heat, stirring often, until melted and combined. Add cinnamon and vanilla extract.
Spread brown sugar mixture evenly in pan and top with drained pineapple in a layer.
Prepare yellow cake mixture as instructed on box, substituting pineapple juice mixture for water. Spread batter evenly over pineapple layer.
Bake for about 30 minutes, or until a wooden pick inserted comes out clean. Invert onto platter, peel off parchment paper, and patch any gaps with reserved mixture.
Cool cake for 30 minutes before serving. Optionally garnish with whipped cream, cherries, and pecans.
