INGREDIENTS
Chicken
- 🍗 4 (8 ounce) boneless chicken breasts
Seasoning
- 🧂 2 teaspoons kosher salt
- 1 teaspoon Italian seasoning
Oil
- 2 tablespoons olive oil
Sauce
- 1 (24 ounce) jar marinara sauce
Dairy
- 🧀 8 ounces part-skim mozzarella cheese
Herbs
- 🌿 1/4 cup torn fresh basil leaves
STEPS
Preheat oven to 375°F (190°C) with racks in upper and lower third positions and gather all ingredients.
Sprinkle both sides of chicken with salt and Italian seasoning. Heat olive oil in an oven-safe skillet over medium-high heat. Cook chicken until golden brown, about 3-4 minutes per side.
Pour marinara sauce over chicken and sprinkle with mozzarella. Cover skillet with aluminum foil.
Bake the skillet on the lower third rack for 20-25 minutes until the cheese is melted and a thermometer inserted into the thickest part of the chicken reads 165°F (74°C).
Remove foil and increase oven temperature to broil. Broil on the upper third rack until cheese is lightly browned, about 2 minutes.
Garnish with fresh basil and serve with pasta or a side dish of your choice.
